Kid and parent approved carrot cake
Carrots are always a staple in our house, whether for us to eat or to feed to the guinea pig and occasionally the dog. The kids are always asking for muffins, so we recently tried a new carrot cake recipe. Not only did we make muffins, but we also made a carrot cake, which the kids decorated all by themselves.
Ingredients:
· 4 eggs
· 1 ¼ cups veggie oil
· 2 cups brown sugar
· 2 cups all-purpose flour
· 2 tsp. baking soda
· 2 tsp. baking powder
· 3 cups grated carrots
· Pinch of cinnamon, allspice, and cloves
Direction:
1. Preheat oven to 350 degrees and grease muffin tins or cake pan.
2. In large bowl, beat eggs, oil and sugar. Add dry ingredients until combined and then add grated carrots.
3. Bake for 45 to 60 minutes if baking a cake (25 to 30 minutes for muffins). Cool completely once a toothpick inserted into the centre of the cake comes out clean.
4. To make the icing – combine ½ cup butter with 8 ounces softened cream cheese. Slowly add 4 cups icing sugar until icing is smooth.
